Refrigeration Standards
- the process of cooling or freezing (e.g., food) for preservative purposes

George's Irish Honey Blond
George Davis, one of my acquaintances from Le Roy's counter, gave Ross Berteig & I each a bottle of his latest creation: homebrewed Irish Honey Blond ale.
Even with a chilled glass and some care in pouring, it formed a very full head.
George recommended letting it sit and warm a bit after removing it from refrigeration, and that seems to be good advice, both to let the head settle and to let the flavor mellow a bit.
The flavor does come on a bit strong, especially at first. It isn't bitter like an IPA, but it is more flavorful than a standard lager. I think it may have the higher alcohol content more typical of an IPA than a lager; or else I was simply dehydrated this evening. In any case I would describe the aftertaste as parching.
I'm at a bit of a loss to compare this to commercial brews, as I don't normally choose a blond ale, but George's came together nicely and I wouldn't have been disappointed if I were served this at a brewhouse.

Open air meat markets are quite common in China. Chicken, duck, beef, pork and other varieties of meat are sold on the streets without refrigeration and with very poor sanitation standards. Don and Kate often buy fruits and vegetables in the open markets, but buy meat only from the refrigerated cases in modern supermarkets.
